Il Bianco Emilia IGT 2022
A pet-nat with fresh aromas and a subtle hint of light sweetness, enhanced by delicate floral nuances of white flowers and acacia. This in a completely dry style.
On the palate, there is a perfect balance between juicy freshness and a soft, elegant structure that is both liveliness and elegance for a delightful drinking experience.
Bright citrus notes of lemon and lime mingle with notes of green apple and a hint of pear, creating a lively and refreshing profile. A subtle minerality adds depth and complexity, adding to the wine’s character and charm.

Projekt Wildtyp – Sprüdla 2023
Energetic and lively sparkling wine with 13 days of skin contact. A special orange pet-nat from Burgenland, with a refined edge of Boris’s style. No added sulphite.
Müller-Thurgau, quartz-gravel/clay soil | 13 days maceration, whole bunch, the grapes were pushed down 2-3x a day. It was completely dry after pressing, then rest for 3 weeks. Then Boris added fresh Grüner Veltliner must and bottled everything immediately to restart the fermentation process in the bottle.
Flavor: Apricot-yogurth and ripe apples with citrus fruits: (pomelo, lemon/lime and grapefruit). Very interesting and fine bitters.
A unique and interesting taste experience due to the skin contact of the Müller-Thurgau. A lively freshness with a fine texture, lots of flavor and dept with a beautiful color. Super tasty!
Weingut Haider – Jung & Sexy 2023
The fruity, berry-like, dark red Pétillant Naturel is pressed from the two grape varieties Blauburger and Rösler. A deliciously surprisingly elegant sparkling wine with a low alcohol content and notes of blackcurrant (cassis). Fine (light) bubble due to naturally formed carbon dioxide. A light, fruity sparkling wine for any occasion!

Soil: Humus-rich brown earth / clay soil
Short maceration. Spontaneous fermentation in stainless steel tanks, no filtration, bottled towards the end of fermentation. No addition of sulphites. Natural acidity and sugar gradation. No fining or other additives. Therefore, turn the bottle upside down and swirl it gently so that the sediment rises.
